What it is
A steamed cake of peeled beans, ground and whipped with water only, with no pepper, oil or seasoning in the batter. It steams to a plain white, springy block, which is why it is called white moi moi.

Cultural significance
Ekuru is Yoruba, strongest in Ogun, Oyo and Lagos, and its deliberate plainness is the point: all flavour comes from the sauce served with it. Grinding and whipping the batter to the right lightness is the skill involved, and it is a common breakfast bought from women who sell it wrapped in leaves.
