What it is

A swallow made from unripe plantain that has been dried and milled into flour, then stirred into boiling water. It is a purple-brown colour and slightly sweeter than other swallows.

Cultural significance

Plantain flour is produced in the plantain-growing belt of the south and south west and sold as a diabetic-friendly swallow, which is how it moved from a local product into national supermarkets. Its faint sweetness divides opinion, and it is usually eaten with strongly flavoured soups that balance it.
